This Breakfast Burritos recipe is simply Southwestern Scrambled Eggs wrapped in tortillas with Picante Sauce (Salsa). This is perfect for a weekend brunch. The Irish sausage is optional, but if you can get your hands on some, I highly recommend it's inclusion for this recipe.
You Will Need
6 Free Range Eggs
4 Large Tortillas
1/2 cup Finely chopped Onion
1/2 cup Finely chopped Red Bell Pepper
2 pinches Paprika
1/2 cup Finely chopped Green Bell Pepper
2/3 cup Diced Ham (Rashers or Canadian Bacon works too)
2/3 cup Cooked and Diced Irish Sausage(optional)
2 oz Milk
1 jar Picante Sauce (Salsa)
3/4 cup Grated Cheddar Cheese
1 pinch Salt
2 pinches Ground Black Pepper
2 small Knobs of Butter
1 Mixing Bowl
1 Small Skillet
1 Large Skillet
If you are using the Irish sausage make sure that it is thoroughly cooked and then diced. I usually cook the sausage, dice it, and then start the rest of the preparation for the breakfast burritos.
In the small skillet put in one of the butter knobs, onion, green bell pepper, red bell pepper, diced ham, and Irish sausage and cook on low heat until peppers are cooked and onions are caramelized. Turn off heat and set aside.
Take your mixing bowl and add eggs, paprika, milk, salt, and pepper. Mix thoroughly. Now take your other knob of butter and slowly melt it in the large skillet and spread melted butter around.
Next, Add scrambled egg mixture to large skillet. Then add the meat/pepper mixture from the small skillet that you set aside earlier. Cook on low heat until the eggs are cooked. A minute before you see the eggs are done, add the grated cheddar cheese and mix thoroughly. Cook for one more minute and turn off heat.
Take your tortillas and spread picante sauce(salsa) on them like you are buttering bread. Only cover the side that will be the inside of your breakfast burrito but be generous with the salsa.
