This is my version of Picadillo. It's a delicious Caribbean ground beef recipe that is something that I love served over Spanish rice or Basmati rice. The Spanish olives really make this dish.
You Will Need
2 Lbs
Ground Beef
3 cloves
Diced Garlic
1
Large Chopped Tomato (seeded)
3/4 cup
Diced Pimento-Stuffed Olives (Spanish Olives)
2 cups
Beef Stock
1 cup
Your favorite Picante Sauce (Salsa)
1 Tsp
Cumin
1 Tsp
Turmeric
3/4 cup
Chopped Onion
2/3 cup
Chopped Red Bell Pepper
2/3 cup
Chopped Green Bell Pepper
2 squirts
Ketchup
3 Tbs
Worcestershire Sauce
2 pinches
Sea Salt
1/2 Tbsp
Black Pepper
Brown the ground beef on medium heat in a skillet and drain off the fat. Return ground beef to skillet and add Salt, Pepper, Garlic, Spanish Olives, Diced Onions, Chopped Bell Peppers,and Worcestershire Sauce. Cook for another five minutes or so, while stirring every so often.
Next, add in the Beef Stock, Picante Sauce (Salsa), Chopped Tomato, Cumin, Turmeric, and Water. Let simmer until a lot of the moisture has boiled off and you have a pretty thick consistency. Serve over any type of rice. Enjoy your Picadillo (pronounced pic-a-dee-oh)!
