On this page I have included a wonderful Cucumber Salad recipe and a very tasty Potato Salad recipe for your Barbecue or Potluck Dinner. You will really add to the event with these two!
CUCUMBER SALAD
Many thanks to Denise and Chris Bring for this recipe! They really know how to do a barbecue and their Cucumber Salad is amazing.
You Will Need
4 lg Cucumbers (6-9" long, slice cucumber very thinly)
1 Purple onion (finely chopped)
1 pkg Sun Dried Tomatoes
10-12 Cherry Tomatoes
1/2 pt Heavy Whipping Cream
1 Tbs Italian Herbs
1 cup Fresh Basil
3/4 cup Cream Cheese
1/2 pt Sour Cream
4 oz Mayonnaise
4 oz Olive Oil
3 lg Tomatoes
1 Tsp Fresh Ground Pepper
1 pinch Sea Salt (optional)
1 Blender
1 lg Salad Bowl
In the blender combine the Heavy Whipping Cream, Mayonnaise, Cream Cheese, Italian Herbs, Fresh Basil, Sour Cream, Olive Oil, Fresh Ground Pepper, and Large Tomatoes. Blend until you get a dressing consistency.
In your salad bowl combine your Finely Sliced Cucumber, Sun Dried Tomatoes, Cherry Tomatoes, and Chopped Purple Onion. Next, pour your dressing evenly over everything and stir together with a large spoon. Add a pinch of sea salt if you think it needs it. Refrigerate at least one hour before serving and give it a stir or two along the way. Once again, kudos to Denise and Chris Bring for their cucumber recipe. Enjoy your Barbecue or Potluck Dinner!
POTATO SALAD
This has been a work in progress but it couldn't be more simple. Use your favorite type of potato for this. Red Roosters are probably the type of potato that I've used the most.
You Will Need
6 lg Potatoes
6 oz Caesar Salad Dressing
1 sm Purple Onion (finely chopped)
3 cloves Garlic (finely chopped)
4 oz Mayonnaise
5 oz Fresh Italian Parsley (flat leaf) or
2 Tbs dried Italian Parsley
1 Tbs Oregano
3 oz Chopped Spring Onions (Scallions)
1 Tsp Sea Salt (and a pinch for the boiling water)
1 Tsp Cumin
1 md Cooking Pot
1 lg Salad Bowl
Peel Potatoes and cut them into pieces about 1/2" by 1/2" or a little bit larger.
Boil potato pieces in water with for 20 minutes with a pinch of Sea Salt, drain and let cool in the refrigerator for 1 hour.
Next, remove Potato pieces from the refrigerator and in your salad bowl combine Potato, Chopped Purple Onion, Caesar Dressing, Mayonnaise, Chopped Spring Onions, Garlic, Oregano, Parsley, Cumin, and Sea Salt. Mix very thoroughly and refrigerate at least one hour before serving and give it a stir or two along the way. Enjoy your Barbecue or Potluck Dinner!
